Southern Thailand follows a simple cycle of summer and rain.
From the Andaman Sea to the Gulf of Thailand, Southern Thailand is shaped by two distinct coastlines, each with its own waters, ingredients, and culinary traditions.
This seasonal menu explores the diversity between these two seas,
where the same ingredient may take different forms depending on place, season, and local customs. It reflects a culinary landscape shaped by monsoon winds, changing weather, and seasonal harvests.
Through each dish, we celebrate the dialogue between land and ocean, and the ever-evolving traditions of Southern Thailand.
