Inspired by Chef Mond’s journey across nearly 14 southern provinces,
this 8-course menu highlights rare and exceptional ingredients from local farmers, fishermen, and artisans—many of which remain
beautifully undiscovered.

Each course is thoughtfully designed to reflect the unique character and depth of flavor from different parts of the South.
